@djura--I've noticed that much of the food in eastern Europe is very much the "poetry of ass enlargement." (Loved that phrase, BTW.) Definitely big on the comfort food--loads of fattening goodness. My favorite meal when I visited Romania was a pork cutlet stuffed with bacon and cheese. Such artery-clogging goodness that would make even the likes of Homer Simpson weep with joy.

many brothers and sisters i had on any

i learned quick, they can't cry with their
mouths full, so i learned to cook

before lunch in the cafeteria to get a meal
after school i washed dishes at a local

you can make it your self...
take about a liter of some fresh, non pasteurized milk, with 3 or more percent milk fat and stir until it boils. Mind not to make a mess while you're at it, boiling milk is unpredictable.
After it boils for 10 sec, take it off the stow, and let cool down, until it reaches 37 deg C. (you might wanna convert that into F). You might wont to have another larger bowl with icy water for quick cool down.
In a separate bowl, mix some fresh, non flavored yogurt and some water, and add the milk you boiled and cooled. You don't have to use much yogurt, since we only need the bacteria, but don't use too little ether (4-6 tablespoons should do it). Stir well, and use a clean towel or some kind of cloth to seal the bowl. Put in an oven @ 50 deg C, and leave over night. After 10 to 12 hours, take the bowl out of the oven, take the cloth off, and leave to cool down to about room temperature. Then stick the bowl into a fridge for at least 4 hours. Stir well (you might use a mixer), and for next 3 days it's good to drink.
Try it with cornflakes, just make sure they're not flavored or anything.

Dough (sorry for not converting the measurements)
250g margarine (non flavored one)
150g sugar
1 egg + 2 egg yolk (you'll need egg whites latter on)
lemon juice and grained lemon skin of one mid size lemon (only the yellow stuff is to be grinned, the white layer underneath is quite bitter)
450g flower
1 teaspoon full baking soda
Mix down margarine until smooth, add the egg, yolk, lemon juice and skin. Stir well, so it all becomes smooth mass. Little by little add flower (mixed with baking soda) and stir. Eventually you'll have to start using your hands. The dough is ready when it becomes even and smooth.
You'll end up with 900 grams of dough - split is into two peaces (500g+400g). Put the larger one in a baking pan and split evenly (I guess the pan should be around 15 by 20")
Filling:
1 kg sour apples
2 tablespoons wheat groats
2 egg whites
2 teaspoons full vanilla sugar
100g sugar
100g raisins
100g grained nuts
peal apples, take the seeds out, and weigh to around 750g. Grind them to mid sized chunks (2-3 mm thick), and dust them with wheat groats (picks up the juice) Stir gently, add raisins and nuts, and let it rest for a short while.
Meanwhile, make some snow from egg whites and sugar, add vanilla sugar when nearly finished. Spoon by spoon mix it with apples until all of it mixed.
Spread the filling evenly on to the dough. Next part is tricky - you need to spread the remaining dough on a table, and move it somehow on top of the filling. I use baking paper for this, but it doesn't always work. You may wont to put dough in a fridge for a short while, this makes it harder, and easier to move around. Maybe you'll think of something better, improvise a little :)
Make sure that edges of upper dough layer are against bottom layer - so the filling is "encapsulated". When done, take another egg, mix it, and brush upper layer with it. Don't use the whole egg.
Oven should be preheated to 180 deg C. Baking should take little under one hour.
Let it cool for 30 or so minutes, add little powdered sugar, and knock your self out!
I need to dig up the sour cherry filling recipe, have it somewhere at home. Quince are first boiled with sugar for 30 minutes, and than used instead of apples (no raisins or nuts added)
